Crispy-Fried Kettle Chip Wings

Ingredients
2 lbs Brookshire’s Flaps and Drumettes
1/2 tsp salt
1/2 tsp black pepper
6 cups Brookshire’s Kettle Chips
1 Tbs fresh parsley
1 1/2 cups mayonnaise
1/2 cup milk
2 eggs
1 1/2 cups flour
canola oil, for frying
Directions
- Spread wings on large baking sheet. Sprinkle with salt and pepper. Place chips in a large zip-top bag, and crush into very small pieces. Pour into a wide shallow bowl. Add parsley. In another bowl, whisk together the mayonnaise, milk and eggs. Place flour in a third bowl. Dip a wing in the flour first and then the mayo mixture. Dip wing in potato chips last. Place wing back on baking sheet. Repeat breading process with all wings.
- Preheat oven to 300° F. In a wide deep skillet, add 3 inches of canola oil. Heat to 350° F. Add wings, 6 at a time. Fry until golden and crispy, about 6 minutes. Remove chicken to a rack placed over a baking sheet. Continue frying with remaining wings. After all wings are fried, place baking sheet in oven. Cook for 10 minutes or until wings are thoroughly cooked.
- Note: 1 cup of whole chips equals 1/3 cup of crushed chips. For a spicy version, use jalapeño kettle chips.
